There are a million recipes for no-bake, energy something-or-other balls all over Pinterest. This is our recipe. We love it. And it’s allergy friendly.
2c oats (gluten-free if necessary)
1c nut or seed butter, e.g. almond/soy/sunflower
1/4c dairy-free mini chocolate chips (optional)
Pulse the oats in a Cuisinart until there are no more whole oats. Add the ‘butter’ and honey. Pulse until incorporated. Add the mini chips. Pulse several times until they’re incorporated. Roll tablespoon-sized amounts into balls. Store in an air-tight container.
We use Barney Butter because it is made from almonds (safe for us) in an almond-only facility. It comes in various flavors (including plain). We tried the Honey + Flax variety today. I like the crunch from the seeds and it isn’t very sweet.
My favorite thing about these balls is that my kids devour them. They are a fast and easy way to get some protein and fat into them without all the junk in other ‘convenience’ foods. And none of my kids is otherwise wild about almond butter.
