Date Balls

Date balls (something akin to a Lara Bar) are super easy to make, endlessly customizable, and a perfect yummy snack. Trust me, your kids will like them. The base will always be dates, but the nut/seed/flavor/other dried fruit additions are up to you. Here’s my recipe for an ‘Almond Joy’ variety.

Almond Joy Date Balls

3/4c almonds
2c pitted dates
1/3c dried unsweetened coconut flakes
1/4c dairy-free mini chocolate chips
1t vanilla
3/4t kosher salt

Pulse the almonds in a Cuisinart until finely chopped. Put in a medium bowl and set aside. Put dates, coconut, chips, vanilla, and salt in the Cuisinart and turn on. Keep it going until the dates are fully pulverized and a ball begins to form. Add the mixture to the nuts in the bowl and mix by hand until fully incorporated. Roll tablespoon size balls in your hands and store in an airtight container.
